Lunch Rush 01: Giant Spicy Chicken Mango Salad Roll!

Yes, It’s October and there is mango in this roll, I know. But I live in sunny Singapore so…it’s always summer. You can omit the mango or swap it!

This easy and delicious salad roll is perfect. It’s crunchy, sweet, spicy, creamy, and super filling too.

Feel free to use rotisserie chicken for this! I don’t like the one from our local shop so I always roast my own, so I added the steps to cook it- which you could batch cook as well.

200g cooked chicken breast
2 tbsp Greek yogurt
1 tbsp sriracha @tabasco always
2 tsp honey
1 tsp soy sauce
1 tsp vinegar
4 sheets of rice paper
4 leaves bibb lettuce or baby gem lettuce
½ mango peeled and finely sliced
1 carrot, finely sliced
½ cucumber, finely sliced
5 sugar snap peas, finely sliced on a bias
Cilantro/ Coriander

Season chicken breast with salt and pepper. Drizzle with olive oil and place the chicken on a lined tray.
Bake the chicken in the oven for 15-18 minutes, until golden and cooked. While the chicken is still warm, using two forks shred the chicken.
Whisk together Greek yoghurt, sriracha, honey, soy sauce, and vinegar until smooth. Season to taste with salt and pepper.
Add the dressing to the shredded chicken and mix to coat.
Add warm water to a large, shallow bowl. Quickly dip the rice paper wraps in the warm water for a few seconds. Lay the two rice paper wrappers beside each other, overlapping around an inch and a half in the center. Then lay 2 more above those, overlapping in the middle.
Lay down the lettuce leaves, then the shredded chicken mix. Top with the carrot, cucumber, mango, sugar snap peas, and coriander sprigs.
Fold the bottom edge over the top and then fold in the sides to cover. Then roll into a tight log
Cut in half or into pieces like sushi.
Serve with your favorite dipping sauce.

Chilli Cheese Naan 🤝🏾 soup weather!

Such a simple dish which doesn't really need a recipe! Adapt it to your palate and make it to dunk in your next soup or eat on it own😎

1 red onion, finely chopped
10-12 cherry tomatoes, diced
½ cup chopped coriander
1-2 green or red chillies, finely chopped (or more if you like it 🔥)
200g mozzarella cheese
2 tbsp milk*
Salt and Pepper
2 naans or 2 pieces of bread
*Some people will put spices like chaat masala, but that’s not my jam. If you like it go for it!

Preheat the oven to 200℃. Pop the naan or bread into the oven to toast for a couple of minutes.
Add all the ingredients for the mix to a bowl and combine
Arrange your naans or toast on a baking tray. Generously top with the cheese mix.
Pop into the oven for about 5 minutes, until melted and bubbling.
Slice and enjoy!

Meatballs are easily in my top 5 for comfort food. I like making a big batch like this and freezing half for another dinner with pasta or rice.

2 400g cans whole peeled tomatoes @lamolisana.sg
2 tbsp olive oil
3 cloves garlic
1 tsp chili flakes (or to taste)
1 large spring fresh basil
1 large shallot (or small onion)
½ cup panko breadcrumbs
2 tbsp milk
Zest of 1 lemon
1 egg
1 medium zucchini
500g ground/minced chicken @sidecarhandcrafted
Salt and pepper to taste
½ tsp sugar
Parmesan or pecorino cheese to grate

Easy Bolognese Stuffed Eggplant Parm!🍆🧀🍅 Save this recipe!

Eggplant:
2 medium purple eggplants
Oil
Salt and pepper to taste

Bolognese:
1 tbsp oil
1 medium red onion, finely chopped
2 tsp fennel seeds
400g pork sausages
3 cloves garlic, minced
1 tsp chili flakes (or to taste)
1 tbsp tomato paste
1 tsp dried oregano
½ tsp sugar
3 cups passata
Salt and Pepper to taste

Topping:
¼ cup breadcrumbs
1 tsp oil
Pinch dried oregano
⅓ cup freshly grated Parmesan cheese
½ cup grated mozzarella
Fresh Basil

Method in comments!
Some tips:
- if you're vegetarian, replace the meat with mushrooms, lentils or more chopped veg!
- use a spicy Italian sausage if you like it 🌶
- do *not* use pre-grated mozzarella 🙅🏽‍♀️

Serve them with a big green salad on the side!
