I soak sultanas in a spiced tea with cinnamon, cloves and ginger, and cardamom.

This recipe uses a tangzhong, which helps to make it super soft and squishy!

The perfect way to use up leftover keema (or any mince).

I made these with poppadoms as the "crunch," but unfortunately, they do get soggy much faster than a crispy tortilla... So I will probably put some tortilla chips next time!

Any leftover mince
Grated cheese
Sliced red onion
Chopped tomatoes
Shredded lettuce
Greek yoghurt (or sour cream)
Coriander Chutney*** delicious!!
1 large tortilla
1 small tortilla

Layer, fold, and pan seared until golden ✨️

Focaccia is my favourite bread to bake and gift😍

I use an 84% hydration and usually a 72 hr cold ferment. This one was 48 hrs. If you can plan a head for 72 hrs, cold ferment is worth it!

I used marinated olives i picked up at @littlefarms along with fresh rosemary. I soaked the rosemary in the same marinating oil. The joy of focaccia is that you can use any toppings you like or keep it plain with a bit of salt, and it's just as good!

Bao down to the prawn toast, bao! 🍤🔥 Recipe to save below!

Crispy, juicy, and air-fried!! This prawn toast bao is the upgrade you didn’t know you needed, soft, crunchy with a hint of spice!

Not ashamed to say that I ate all of these.

Makes 6
250g shrimp, peeled and deveined
1 tbsp cornflour
1 egg white
2 cloves garlic, minced
1-2 green chillies, minced
1 tsp ginger, minced
Finely chopped spring onion
1 tsp salt
1 tsp sesame oil
Steamed bao
Sesame seeds
Oil to brush

¤Mince 250g prawns until finely chopped into a paste.
¤Add prawn paste, cornflour, egg white, garlic, green chilli, ginger, spring onion, salt, and sesame oil to a bowl and mix until combined
¤Steam the baos.
¤Preheat the air fryer to 200℃ for 3 mins. Brush a thin layer of oil over both sides.
¤Once the air fryer is ready, place a single layer in the tray with the sesame side facing up. Cook for around 3 mins until golden brown.

Save and make these because they are 🔥!

I used a ratio of 1:2 eggs to warm water and topped with toasted sesame oil, light soy sauce, spring onions, and toasted sesame seeds.

Would be delicious with steamed rice!
